This Dragon Fruit Crepe Cake recipe yields thin dragon fruit-flavored crepes stacked with fresh whipped cream and topped with fresh dragon fruit. I have been wanting to make a crepe cake for awhile, but just haven’t found the right occasion. So when Nature Restore sent me their dragon fruit powder, I knew exactly what to do with it!

Dragon Fruit Crepe Cake recipe

This Dragon Fruit Crepe Cake recipe looks more intricate than it actually is. Crepes are actually very easy to make and even easier to stack with whipped cream into a beautiful cake. Here’s what you’ll need:

  • cake flour
  • cornstarch
  • dragon fruit powder
  • whole milk
  • butter
  • sugar
  • heavy whipping cream
  • vanilla
  • fresh dragon fruit (optional)

If you don’t want to purchase dragon fruit powder, consider this dragon fruit crepe cake recipe by tastemade, which uses fresh dragon fruit in the crepe batter. However, I learned that fresh dragon fruit can be difficult to find and costly. So, instead of the tastemade dragon fruit crepe cake, try mine which uses dragon fruit powder alone for the batter. I used Nature Restore Dragon Fruit Powder (Pink Pitaya Powder).

What to do with dragon fruit powder

Dragon fruit powder can be used in many recipes, including Dragon Fruit Crepe Cake, smoothies, oatmeal and breads. I hope to use it to flavor macarons soon or dust it on a tart or cake as a garnish.

Tips:

Consider your first crepe a practice crepe. After a couple attempts you’ll find what works best for you as far as swirling the batter around and flipping it over. I used a small rubber spatula to lift the edges and flip.

To help the crepes cool faster I placed them on sheets of parchment paper on the counter before stacking them up on a plate together.

If you don’t have a blender, you can use an immersion blender or food processor to get the lumps out of the batter. I used an immersion blender.

Ingredients
  

Dragon fruit crepes

  • 1 ¾ cup cake flour 210g
  • ¼ cup cornstarch 30g
  • 3 teaspoon dragon fruit powder
  • 2 cups whole milk (540g) room temperature
  • 3 tablespoon butter (40g) melted and cooled
  • 3 tablespoon sugar
  • Pinch of salt
  • pink food coloring optional

Whipped cream

  • 2 cups heavy whipping cream 470g
  • ½ cup powdered sugar 60g
  • 1 teaspoon vanilla

Garnish/optional

  • 1 dragon fruit diced

Instructions
 

Do ahead

  • The crepe batter can be made a day ahead of time.

Prep the crepe batter

  • Whisk together flour, cornstarch, dragon fruit powder and salt. Pour into a blender.
  • Add milk, sugar and butter. Pulse until all lumps are gone. Add pink food coloring, if desired, and pulse again.
  • Rest batter in the fridge for at least 30 minutes or up to 1 day.

Cook the crepes

  • Heat a small nonstick pan over medium heat. With a small ladle or ¼ cup measurement, scoop batter onto the preheated pan and swirl it around until it reaches the edge of the pan in a full circle.
  • Cook for 30-40 seconds, then flip and cook 30 seconds more. Remove to a plate. Repeat until all of the batter is gone.

Make the whipped cream

  • In a stand mixer fitted with the whisk attachment or in a bowl with beaters, whip the heavy cream, powdered sugar and vanilla together until medium-stiff peaks form.

Assemble the crepe cake

  • Place a small dollop of whipped cream on a plate or a cake board, and spread thin to help the first crepe stick to the surface. Place the first crepe down.
  • Pipe a thin layer of whipped cream on top of the first crepe. Place the second crepe on top. Repeat until all crepes are used.
  • Decorate the top with additional whipped cream and fresh dragon fruit, if desired.
