This S’mores Campfire Skillet recipe has a graham cracker oat crust, chopped chocolate and mini marshmallows that bake to gooey perfection in a cast iron skillet either over a campfire or in the oven at home.
Whether you’re camping in the great outdoors or just want s’mores at home without the fire, this S’mores Campfire Skillet recipe is a great way to avoid sticky fingers without sacrificing the gooey marshmallow experience.
Prep s’mores for camping
If you’re making this dessert for camping, you’ll want to do some prep ahead of time. The graham cracker oat crust dough can be stored in a container or plastic bag until you are ready to assemble. You will also want to chop your chocolate ahead of time or use chocolate chips.
I used a semisweet chocolate baking bar and chopped it roughly with my trusty Lamson Santoku Cleaver. If you have been following me for a while, you know this is my favorite knife. It appears in almost every single video on my TikTok and Instagram.

Why I love my Lamson
The Lamson Santoku Cleaver is the most functional AND beautiful knife in my kitchen. I use it daily for both cooking and baking. What makes this knife stand out to me is how versatile it is. It is perfect for everything from thinly slicing garlic to making perfect brownie slices.
This cleaver crushes recipe prep and final slicing. I love that the cleaver is sharp enough to make clean cuts and supports the cake or pie slice as it falls away, acting as a serving utensil. As a busy baker, this dual functionality is key.
I am also in love with the look of the knife. The walnut handle and brass rivets are timeless. The blade is a tempered American high-carbon stainless steel full-tang blade, meaning it runs the full length of the handle, so you know it will last a lifetime.
Lamson also has high-quality utensils, such as bench scrapers and pie servers. Shop all Lamson products.

📖 Recipe
S’mores Campfire Skillet
Ingredients
Graham cracker oat crust
- ¾ cup butter softened
- 1 cup light brown sugar packed
- 1 teaspoon vanilla extract
- ¾ cup old fashioned or quick oats*
- ¾ cup all purpose flour
- 1 cup graham cracker crumbs from about 9 full cracker sheets
- 1 teaspoon baking powder
- 1 teaspoon salt
Filling
- 2 cups mini marshmallows
- 1 cup chopped semisweet chocolate
Instructions
Do ahead
- If making this for camping, you can make the graham cracker dough ahead of time at home and chop the chocolate ahead of time, storing them until you’re ready to assemble at the campfire.
- If baking in an oven, preheat to 350°F. Grease a 10.5-inch cast iron skillet.
Make the graham cracker dough
- Cream together butter and brown sugar for about 3 minutes on medium speed. I used a stand mixer fitted with a paddle attachment, but you can also use hand beaters.
- Add vanilla and beat to incorporate.
- In a separate medium bowl, combine oats, flour, graham cracker crumbs, baking powder and salt. Whisk thoroughly to combine.
- Add dry ingredients to the creamed butter mixture. Beat just until combined.
Assemble the skillet
- Pat ⅔ of the mixture into the bottom of the skillet.
- Layer mini marshmallows and chopped chocolate on top of the dough. Crumble remaining dough over the top.
- Bake for 18-22 minutes in a conventional oven OR cover with foil and set over a campfire, checking for doneness every 5 minutes.
- Let cool for 10 minutes before serving. Top with vanilla ice cream and chocolate sauce, if desired.
Notes
- Grease your hands to make patting the dough into the skillet easier. Or if you’re camping use the plastic bag you stored the dough in to help tamp it down.
- *Oats are optional.
- I crushed my graham crackers in a food processor, but you don’t need to. You can put the graham cracker sheets in a plastic bag and crush them with the bottom of the cast iron skillet or a rolling pin.
